Banana Bread Mini Loaf-Coconut Flour

Recipe:
• 4 Egg Whites
• ½ ripe Banana
• 2 Tbs Coconut Flour
• 2 packets Stevia
• ½ Tsp Baking Powder
• ¼ Tsp Cinnamon
Recipe:
1. Preheat oven to 375 degrees Fahrenheit
2. Blend all ingredients
3. Spray mini loaf tin with Non-Stick Spray
4. Transfer batter to sprayed mini loaf tin
5. Let sit for 3 minutes
6. Bake for 40 minutes

Peach Cobbler-Coconut Flour

serves 1
Recipe:
• 1 ripe Peach
• 2 Egg Whites
• 1 Tbs Unsweetened Almond Milk
• 1 Tbs Unsweetened Applesauce
• 1 Tsp Vanilla Extracts
• 2 packets Stevia
• 1/3 Tsp Baking Powder
• ¼ Tsp Cinnamon
• 1/8 Tsp Nutmeg
Directions:
1. Preheat oven to 375 degrees Fahrenheit
2. Spray baking dish with Non-Stick Spray
3. Slice Peach and lay on bottom of baking dish
4. Blend the remaining ingredients
5. Pour batter into dish and surround the peach slices
6. Let sit for 3 minutes
7. Bake for 25 minutes

Holy yumminess!! 😳😋 growing up in a French family and owning a French restaurant I had always eaten SOO many crêpes! Soo… I decided to make a healthy coconut flour version! Not that crêpes are even that unhealthy.. I topped mine with my homemade warm strawberry sauce! (Recipe below as well). I Also sprinkled some cinnamon on top!
Serves 1
Recipe:
• 4 Egg Whites
• 2 Tbs Coconut Flour
• ¼ Cup Unsweetened Almond Milk
• 2 Tbs Unsweetened Applesauce
• ½ Tsp Vanilla
• 2 Packets Stevia
Directions:
1. Blend all ingredients
2. Cook on pancake pan sprayed with Non-Stick Spray or covered in oil like traditional crepes, but be careful because they are delicate.

Recipe:
Chopped strawberries
Stevia
Directions:
Microwave strawberries until very mushy/saucy,
Then thoroughly mix in stevia

Cinnamon Roll Pancakes-Coconut Flour
Serves 1
Recipe:
• 6 Egg Whites
• 3 Tbs Unsweetened Applesauce
• 3 Tbs Coconut Flour
• 1 Tsp Baking Powder
• 4 packets Stevia
• 1 Tsp Vanilla
Cinnamon Swirl Recipe:
• 1 Tsp Cinnamon
• 3 Tbs Sugar Free Syrup, Agave, Maple Syrup, OR Honey
Cream Cheese Glaze Recipe:
• 3 Tbs low fat/ff Cream Cheese OR Plain Greek Yogurt
• ¼ Tsp Vanilla
• Unsweetened Almond Milk
Directions:
• Blend all Pancake ingredients
• Set batter aside for 3 minutes
• Mix Cinnamon Swirl Ingredients in bowl with spout
• Distribute pancake batter on griddle (cooking on medium low) sprayed with Non-Stick Spray or covered with Oil
• After 45 seconds, swirl Cinnamon Swirl mixture on to each pancake (not too close to the edge)
• Once pancake side is cooked, flip
• Cook remaining side
• Mix all Cream Cheese Glaze ingredients (add the amount of almond milk, until your desired consistency is reached).
• Drizzle Glaze over stacked pancakes

Cinnamon Roll Microwave Muffin-Coconut Flour

Makes 1 Muffin
Recipe:
• 1 Tbs Coconut Flour
• 2 Egg Whites
• 1 Tbs Unsweetened Almond Milk
• 2 packets Stevia
• ½ Tsp Vanilla
• ¼ Tsp Cinnamon
• ¼ Tsp Baking Powder
Directions:
1. Blend all ingredients
2. Let sit for 3 minutes
3. Spray bowl with Non-Stick Spray
4. Pour batter into bowl
5. Cook in microwave for 2 Minutes and 45 Seconds
6. Flip bowl and muffin
7. Let cool
My cream cheese “frosting” is a mixture of .5 packet stevia and 2 tbs ff cream cheese. Enjoy!
