Makes 1 Muffin
Recipe:
• 1 Tbs Coconut Flour
• 2 Egg Whites
• 1 Tbs Unsweetened Almond Milk
• 2 packets Stevia
• ½ Tsp Vanilla
• ¼ Tsp Cinnamon
• ¼ Tsp Baking Powder
Directions:
1. Blend all ingredients
2. Let sit for 3 minutes
3. Spray bowl with Non-Stick Spray
4. Pour batter into bowl
5. Cook in microwave for 2 Minutes and 45 Seconds
6. Flip bowl and muffin
7. Let cool
My cream cheese “frosting” is a mixture of .5 packet stevia and 2 tbs ff cream cheese. Enjoy!
Thanks for the recipe! I just had it for breakfast. Yum! It felt like I was eating cupcakes. My microwave finished them in 2 minutes, 30 seconds, so I would recommend that people test their microwaves to see which time is best for them, since some are stronger than others. I will need to get ff cream cheese. I used unsweetened applesauce as the “frosting”, but I can’t wait to try your frosting recipe next time. Thanks for my new favorite breakfast recipe!!!

I’ve made something similar and I like to make one jumbo muffin. This is so easy and a nice alternative to oatmeal in the morning…,,
mmm i will have to try making a jumbo one!! and yes, they are great because they are so incredibly quick/easy!
