Cinnamon Roll Pancakes-Coconut Flour
Serves 1
• 6 Egg Whites
• 3 Tbs Unsweetened Applesauce
• 3 Tbs Coconut Flour
• 1 Tsp Baking Powder
• 4 packets Stevia
• 1 Tsp Vanilla
Cinnamon Swirl Recipe:
• 1 Tsp Cinnamon
• 3 Tbs Sugar Free Syrup, Agave, Maple Syrup, OR Honey
Cream Cheese Glaze Recipe:
• 3 Tbs low fat/ff Cream Cheese OR Plain Greek Yogurt
• ¼ Tsp Vanilla
• Unsweetened Almond Milk
• Blend all Pancake ingredients
• Set batter aside for 3 minutes
• Mix Cinnamon Swirl Ingredients in bowl with spout
• Distribute pancake batter on griddle (cooking on medium low) sprayed with Non-Stick Spray or covered with Oil
• After 45 seconds, swirl Cinnamon Swirl mixture on to each pancake (not too close to the edge)
• Once pancake side is cooked, flip
• Cook remaining side
• Mix all Cream Cheese Glaze ingredients (add the amount of almond milk, until your desired consistency is reached).
• Drizzle Glaze over stacked pancakes
