Carrot Cake Fluffy Pancakes-Coconu Flour
Recipe:
• 6 Egg Whites
• 3 Tbs Coconut Flour
• 3 Tbs unsweetened Applesauce
• 4 large grated Baby Carrots
• 1/4 Tsp Cinnamon
• 1/8 Tsp Ginger
• 1/8 Tsp Nutmeg
• 1 Tsp Baking powder
• 4 packets Stevia
• Vanilla Extracts, Raisins, Nuts (all optional).

Topping:
Sweetened Greek Yogurt, Maple Syrup, Cinnamon

Directions:
1. Preheat griddle to medium low
2. Blend all ingredients except 1/2 of the grated Carrot
3. let sit for 3 minutes (allows flour to absorb some moisture and thicken batter)
4. Add the rest of the grated Carrot
5. Whisk batter
6. Cook pancakes on one side (be careful not to burn),
7. Flip and cook on second side
8. Flip to the first side to ensure it’s fully cooked
9. Stack and top

25 g Carb (11 Fiber, 8.5 Sugar)
