Low Carb and Gluten Free Chicken Tenders


Makes 3 Strips (serves 1)
3 strips of Chicken Breast (6-8 oz)
1/4 Cup Raw Coconut Flour
Chicken Seasoning (low salt herb blend)
6 Tbs Liquid Egg Whites
Coconut Oil or Light Butter
Preheat griddle
Whisk Salt, Coconut Flour, Seasoning, and 2 Tbs Egg Whites Together
Soak Chicken Strips in remaining liquid egg whites
Cover place soaked Chicken Strips in Flour mixture
Make sure strips are fully covered
Melt Butter/Oil on griddle
Fry coated strips in Oil/Butter
Once sides are crispy (and the inside of the Chicken is no longer pink) the. Remove Chicken from griddle
If Chicken is crispy but not fully cooked, then place strips in the oven and bake until no longer pink.
