Oat Pancakes 

  

Serves 2

Recipe:

1 cup Old Fashioned Oats

2 Egg Whites

1/2 cup Milk (dairy or non dairy)

1 Stevia packet

3/4 Tsp Baking Powder

1/4 cup Unsweetened Applesauce 

(Optional) Bluberries or other fruit (to cook into pancakes)

Directions:

Blend first 6 ingredients in a blender until smooth

Heat nonstick griddle to medium low

Oil the pan 

Pour 1/4 cup of the batter onto the griddle 

Add fruit if desired

Flip when bubbles appear

Cook until the pancake doesn’t have batter in the middle 

Repeat and enjoy!
